Summer feels like it’s almost over!!! NOOOOO!!!! Well I did my best to keep it “summery” Bright sugary cookies!!!! I used “What’s New Cupcake” for the sugar cookies recipe and royal icing to decorate.

Chocolate Sugar Cookies:
16.5oz Sugar Cookies
1/4 c unsweetened cocoa powder
1/3 c flour

knead them all together.. spread with a rolling pin..cut with cookie cutter and bake at 350 degrees for 7-12 min.

Royal Icing: makes about 1 1/2 cups
4 cups powdered sugar
3 tbs meringue powder
1/2 cup warm water..pour these in by the tablespoon and watch the consistency.
Mixer on medium for 7-10 minutes.

Cupcake Love

I didn’t realize how long of a hiatus I took from blogging! Well I’m back and working on the business aspect of my baking. I really want to spread the word and start doing charity events, bake sales, fundraisers…etc. I have a lot of “educating myself” to do. In the meantime, here’s my new coconut carrot cupcake that I am going to be naming…

“Goody two shoes”


I found a carrot in the fridge the other day and thought about how I had not made a carrot cake since easter and wanted to challenge myself by mixing it up a little. I used pineapple juice and coconut flakes to mix into the batter and the juice actually made the cupcake a lot more moist!

My cream cheese frosting was started with
a stick of butter
a regular 8oz box of cream cheese
added confectioners sugar

I really don’t like adding so much powdered sugar like other recipes I’ve seen because the frosting just gets way too sweet! I guess what I’ve found to be a good method is really using room temperature butter and cream cheese and adding just enough confectioners sugar to make the frosting stable. I put the frosting in the freezer for 5 min. (or less, again just depends on the stability) and the frosting becomes “pipeable”! Looks like vanilla ice cream doesn’t it?

I recently decided to focus on cupcakes cupcakes cupcakes and really perfect my baking and the piping..decorating..etc. I realized my cakes have been good..but not great and it’s because I am an amateur!  I was biting off more than I could chew and I made good cakes but they weren’t perfect for me. :(  With that, I realized I needed practice and to pick a specialty which is cupcakes (and cake balls,pops,bites..etc.) I also want to get into cookies because I’ve found, with cutters, you can decorate them (specially with royal icing) and they can be souvenirs, presents, and they can go along side the cupcakes and cakeballs! I found a cute website that makes all kinds of specialty cookies: Flour Pot Cookies They have the cutest designs!

But anyways, as I was saying, I’m still going to do cakes but I’m going to be picky with which cakes I want to do. Yes this means less business but it also means better quality. I don’t wanna make a sheet cake that could  have been bought at publix.

I have also been watching Cupcake Wars on Food Network and I can’t stop thinking about how I would do if I (one day) competed! I love the challenges up until the big one at the end. That would make me go loco! They have some pretty amazing looking recipes on food networks cupcake wars site and I really want to try this Chocolate Pink Cupcake. It’s chocolate cake with ganache filling and pink buttercream! I would probably make it a strawberry buttercream though :)

Now there’s Ivey Cake from the last challenge that I sort of got freaked out by because she was all over the place and telling her mom what to do like she’s..well…not her mom?! Way too controlling..and got too confident in the end I think but she did well and her cupcakes were cute! I think her website and ideas are adorable! If I could travel all over the world just for desserts and bakeries I would totally do it!!!! She’s in Texas..maybe one day I can visit.

Now on the TOP of my list of bakeries..since I’m filipina and love anything in terms of food from my culture..is Christine’s Bakery. Actually it’s Philippines Red Ribbon and Goldilocks but that’s only because from what I’ve been told (by family and friends) they are the best. I haven’t actually tried their goodies. Christine’s on the other hand I have tried and once in a while my uncle will come down from NY and bring bags of her pan de sal. Soft, moist, slight hint of sweet, bread :) There’s also the rolls and last but not least the ensaymada or cheese roll! yum!!!!! If you’re ever in Bergenfield,NJ you have to go there and watch a filipino movie at the theater on S. Washington Ave. Oh I miss my childhood!!!

Now because I mentioned red ribbon..I’m going to post a cake of theirs that I have been wanting to try and perfect..because it’s my mother’s favorite :)
